As I’ve gotten older, I’ve started to experiment with different ways of eating, whether it’s following the Keto Diet or doing intermittent fasting. I’ve noticed that I feel differently, and my body reacts differently, depending on what I eat.
Exploring Nutrition and the Gut Microbiome
Because of this realization, I approached the team at LaunchLKN to organize a community event focused on nutrition and the human gut microbiome.
In recent years, more people have gone gluten free—even without a formal diagnosis like celiac disease. That led me to ask an important question: Why does gluten make so many people feel unwell?
Bringing Experts Together to Answer Big Questions
My co-organizers at LaunchLKN connected me with three incredible speakers:
- Bill Aimutis, food scientist and director of the NC Food Innovation Lab
- Brooke Navarro, founder of allergen-free food manufacturer Without A Trace
- Nicole Magryta, nutritionist and author of Nourish Your Tribe
At the event, we explored questions like:
- Has something changed with how we grow wheat?
- Is the human gut microbiome evolving?
- Is modern food processing a factor?
- Or is something else at play?
A Successful Community Event
We had a great turnout at the NC Food Innovation Lab in Kannapolis, NC, and attendees were able to tour the facility after the discussion.
As a bit of a foodie, I really enjoyed organizing this event and learning from such knowledgeable speakers.
